Simple and Easy : Fish Tacos

 

 

Delicious and Easy and perfect for the summer!    You can either Fry or Grill your fish I prefer grilling or even baking for a healthier option.  Paired with either Mango Salsa or this tangy slaw its sure not to disappoint.

Ingredients

Fish and Marinade

  • White Fish of your choice ( Tilapia or Sole works well)
  • 1 clove of garlic chopped
  • 1 serrano pepper chopped
  • Juice of 1 lime
  • 1/4 cup of canola oil
  • dash of salt & pepper

Simple Slaw

  • 1/4 cup shredded red cabbage
  • 1/4 cup shredded green cabbage
  • 2 carrots julienned
  • 1/4 of a small red onion sliced
  • 1 red bell pepper julienned
  • 1- 2 Tbsp sugar or sugar alternative (Stevia)
  • 1/2 cup of apple cider vinegar
  • 1/4 cup of olive oil
  • Juice of 1 lemon
  • Juice of 1 lime
  • salt & pepper to taste

Toppings and extras

  • 1 avocado sliced
  • 1 tomato sliced
  • Mango Salsa (recipe here)
  • Greek Yogurt with a squeeze of lime
  • Tortillas or Lettuce (for lettuce wraps)

Directions:

Mix together the garlic, oil , lime juice , serrano pepper. Pour over fish and let marinade for 15-20 mins    Meanwhile combine your cabbage, carrots , onion and red pepper set aside.   Whisk together vinegar, sugar, olive oil and lemon and lime juice.  Add salt & pepper to taste and pour over slaw cover and refrigerate.

Preheat your grill and cook fish approximately 3 -4 mins on each side or until its white and opaque. If it flakes thats a good thing!

Divide fish into tortillas or lettuce add slaw and or your preferred toppings and enjoy!
